I have a coursework project where i have to find 10-15 people pulse rates, when they have ran 100 meters (for example) and look at the change of pulse rate from doing nothing to working out.
Where could i possibly get this information from?
Any help would be greatly appreciated, thank-you.

Get family and friends together and test people. First measure their resting heart rate. Find there pulse and count the number of heart beats in one minute and record. Than do this after they run.
Repeat 10-15 times.
For example, my resting heart rate would be 70. After running, my heart rate would be 130. Heart rate increases with work.

Why not get together with your classmates and do the experiment yourselves. If you all have the same coursework you will all be able to use the results.
If not you could go along to your local stadium and ask a few of the athletes if they would mind helping you.

I’m guessing this is a school project. Explain to the PE teacher, or get your science teacher to explain, what your coursework entails. It could be built into the PE lesson, as I am sure that you are not the only one needing this information.
An organised PE teacher would get the whole class to take their resting and after exercise pulse. It could come in useful for a theoretcial PE lesson for the teacher as well.

As Amanda says but :
a) take 3 readings of resting rate to get an average reading
b) subtract resting rate from rate after exercise
